ALOO FRY

Instructions

  • Chop potatoes into small cubes
  • Add them in water and salt and leave them for sometime (this will get the starch out of them)
  • Add oil (this needs more oil than usual)
  • Add mustard seeds
  • Add cumin seeds
  • Add asafetida
  • Add 2-3 dry chillies
  • Add curry leaves
  • Add 7-8 fenugreek seeds (menthulu)
  • Add 1 spoon toor dal or chana dal (kandi pappu or pachhi senaga pappu)
  • Add 1 spoon urad dal (minappappu)
  • Add 1 spoon garlic paste or crushed 5 garlic cloves
  • Add some turmeric
  • Add potatoes taken out from water
  • Mix everything well and add some salt
  • After sometime, add chili powder as required
  • Add half spoon coriander powder or more according to the quantity of potatoes
  • Add half spoon cumin powder or more according to the quantity of potatoes
  • Keep mixing them and it takes some time to cook potatoes, so cut them into very small cubes
  • Add coriander leaves and once if they are cooked, check for salt
