ALOO KURMA

Instructions

  • Take potatoes and make them into half or 4 parts if they are really big and boil them with little turmeric
  • After they are perfectly boiled, peel them off and chop them into pieces of medium size
  • Meanwhile, chop 2 medium onions
  • Chop 2 medium tomatoes
  • Chop a few chillies (optional)
  • Add oil in pan
  • Add mustard seeds
  • Add cumin seeds
  • Add curry leaves
  • Add onions, salt and put the lid on medium flame
  • Add ginger garlic paste after onions are cooked well and put on the lid
  • After a while, add tomatoes
  • Add chilli powder as required
  • Add 1 spoon coriander powder
  • Add more than half spoon cumin powder
  • Add 3 pinches of garam masala (optional)
  • Mix everything well and add water as required and put the lid on
  • After the gravy is cooked, add potatoes
  • Check for salt and add water if required
  • Add coriander and put the lid on and let it settle.

Notes

You can also add other veggies or any other kurma recipe is also the same. masala and add water accordingly. Rest of the process is same. You can do the same recipe for CAPSICUM KURMA, no need to boil capsicum before, add 2 or 3 spoons for curd after adding capsicum and few some mint leaves along with onions in the beginning, this is optional, but it adds so much flavor. For MIX VEG KURMA, you can add cauliflower, carrot, beans, green peas without boiling, after adding tomatoes and spices, mix them well and fry them and then after sometime, add some water and mix and little curd, at the end, add boiled potatoes after all the veggies are perfectly cooked. Check for the final taste.
