EGG BURJI WITH CHILLI PASTE OR CHILLIES

Instructions

  • Chop 2 big onions
  • Fine chop 10-15 chillies and keep them aside, or make a paste of 10-15 chillies depending upon your spice choice
  • Add oil in pan
  • Add mustard seeds
  • Add Cumin seeds
  • Add Curry leaves
  • Add Dry Chilies
  • Add onions
  • Add some salt and put the lid on
  • Add some turmeric
  • Add 1 medium spoon Ginger Garlic paste
  • Let all of it get cooked very well
  • Add chillies or chilli paste and put the lid on for a while
  • Add 1 spoon coriander powder
  • Add less than half spoon cumin powder
  • Add 5 or 6 eggs depending upon the quantity of onions
  • Add some salt and mix it well
  • Add coriander and check for salt

Notes

Tip: If you're doing chilli paste, also add coriander to the paste directly, it gives more flavor. It is also better if you add coriander for this fry for sure and no chilli powder should be used at all in this fry, so only add more chillies if necessary but not chilli powder.
